Sevillano

Sevillano olives come from the Sevillano tree, a vigorous and widely admired cultivar originally from the Seville region of Spain and now grown extensively in California. Known for its large, spreading canopy and strong drought tolerance, the tree produces some of the biggest table olives in the world, often referred to as “Queen” olives. Sevillano fruit is firm, crisp, and mild in flavor, making it ideal for brining and for stuffing with ingredients like garlic, pimentos, almonds, or cheeses. The Sevillano tree is only partially self-fertile, so it relies on cross-pollination for optimal yields, with Manzanillo, Mission, and Ascolano commonly used as effective pollinators. Valued for both its impressive fruit size and its adaptability, the Sevillano cultivar remains a standout choice for premium table olive production.
