Picual olives come from the Picual tree, one of Spain’s most important and widely planted olive cultivars, especially dominant in the Andalusian provinces of Jaén, Córdoba, and Granada. The tree is hardy, highly productive, and well adapted to both heat and drought, making it a dependable choice for large-scale olive farming. Picual olives are medium-sized and are especially prized for producing a robust, high-polyphenol extra-virgin olive oil with bold notes of green tomato, fresh herbs, and a distinctive peppery finish. The Picual tree is partially self-fertile, but cross-pollination from cultivars such as Hojiblanca, Arbequina, and Manzanillo can help improve fruit set and consistency in some orchards. Celebrated for its strength, flavor intensity, and exceptional oil stability, Picual remains one of the cornerstone varieties of Spanish olive cultivation.
