Ascolana olives come from the Ascolana tree, a robust and historic Italian cultivar originating in the Marche region, prized for both its table olives and high-quality oil. The tree has a medium to large, spreading canopy and is valued for its vigor, reliable productivity, and adaptability to a variety of Mediterranean climates. Ascolana olives are medium to large in size, with firm, green-to-bright yellow fruit that is often harvested for the famous “Ascolana Tenera” stuffed and fried olives, as well as for smooth, fruity extra-virgin olive oil. The oil carries notes of ripe fruit, fresh almond, and subtle herbaceous undertones, offering a balanced and distinctive flavor. The Ascolana tree is partially self-fertile but benefits from cross-pollination with cultivars such as Leccino, Frantoio, or Moraiolo to maximize fruit set.
