Sevillano olives come from the Sevillano tree, a vigorous and widely admired cultivar originally from the Seville region of Spain and now grown extensively in California. Known for its large, spreading canopy and strong drought tolerance, the tree produces some of the biggest table olives in the world, often referred to as “Queen” olives. Sevillano fruit is firm, crisp, and mild in flavor, making it ideal for brining and for stuffing with ingredients like garlic, pimentos, almonds, or cheeses.
